Chinese New Year Fries

Last minute preparations.  This morning we took out the uncooked prawn crackers to dry under the sun.  (My mom said if dry the crackers under the sun, they will "bloom" out bigger under the hot cooking oil)  Yes, she is very right!  I didn't do that one year and the crackers did not expand as big as it should be.

Andy is the commander here.  He said that he would do it after dinner when the sun has set... he knows better, I let him take charge when it comes to frying.  I can help with the  cleaning of tins, packing them up and washing here and there.

Some could be "flattened" 
but some still curled up cos he put in too many at a time...
Our mission done... 
Just in time for CNY...

  3. wah, i love prawn crackers lor.. and now only i know the tricks to get them right!! let them "sun tan" before frying, this one i knew.. but press them while frying, this one tarak tahu, i thought just dump in and let them curl naturally.. now i know if flat then easier to store and eat too.. cool cool cool!!

  4. I like to eat but do not like to fry them..the kitchen will be very greasy after frying..so many tins enough for the new year..:D

  5. Good job! Managed to fill so many tins with the crackers. Can last you a few days I think. I am just wondering, what do you do with the used oil after frying the crackers?

    1. Oh, I am going to throw them away cos I don't cook each day. Otherwise I could use it to fry fish.

  8. When I saw your first picture (before reading the post title), I was like "Wah, who's this sexy guy with a bare-back?", hehe.. Err, so I guess you have to clean up all the oil splatters after frying lor?

    I once bought (12) frozen curry puffs from my colleague, and I put them in the oven to bake (because I was lazy to open wok and fry, and also because of the oil splatters and all), I thought I was very clever, but no.. "lek mm chit".. It turned out yucky and all went into the bin!

    1. Why yucky? Baking also ok .. maybe the curry puffs not nice inti inside? My son is always bare front and back when in the house... hahaha..

  9. Yesterday I fried 3 big biscuits tins of keropok. Took me 3 hours cos I fried piece by piece and flattened each to save space in the tin. Tedious job but nevermind once in a year I do that. Best with acar. Yummmy!!!!..
