Healthy Oatmeal Pine Nut Cookies For Snack Moments

MY SECOND TRY... The first time, my oatmeal cookies turned out pretty hard for me.  Now my teeth are not as strong as before, I try not to bite too hard for fear, I might need dentures sooner than expected.  LOL...  This time I made them flatter for easy biting and I added in pine nuts to enhance the flavor.  Besides that I use fine palm sugar instead of the normal white sugar. 

The method of doing is so easy, anyone can do it and it is a good snack for in-between meals.  Oopss.. if any of you gain weight, please do not blame me!  LOL... I know I am gaining, this CMCO refrains me from going out as much as before and I have to spend more time at the kitchen..... 

100gm rolled oats (Toast them for 5 minutes beforehand)
100 gm multi purpose flour
40 gm brown sugar (I cut down the sugar)
1 egg
40 gm melted butter
30 gm oil (I used olive oil)
1/2 teaspoon salt
1/2 teaspoon baking powder
pine nuts (optional)
Method:
Mix toasted roll oats and flour, salt and baking powder
Add in sugar, followed by butter, oil and egg, lastly pine nuts
Mixed everything together 
Shape them onto the tray
170 degrees for 20 minutes
(different oven different heat)
Different and odd shapes... 
Nevertheless, a healthy snack to bite....
Especially for me...
Just simply like to bite something after meals...
or while watching TV or working on the laptop!

  3. Guess it taste very nice. For healthy snacks, I just eat plain nuts like almonds or walnuts. Unhealthy snacks like anything containing sugar like these kind of oats cookies I eat a lot too, lolx!
