Easy Steps To Banana Walnut Cake For Two

BAKING MODE IS ON TODAY....

Before I changed my mind, I quickly took out my butter to thaw in room temperature.  I have been contemplating for the last few days whether to do or not to do, the mood must be there, right?  LOL.. My bananas have been sitting in my kitchen for the last couple of days, not totally black yet, still half half and if I don't do the baking today, they will end up in the dustbin tomorrow.  More or less, it is because of the over-riped bananas that I have to bake just now....

Firstly, the ingredients..... 
110gm butter
65gm sugar (I used only 50gm brown sugar)
2 eggs
100gm self raising floor
30gm crushed walnuts (another few to decorate on top)

Cream butter and sugar....
Then add in one egg at a time....
Lastly, add in the mashed banana, 
followed by flour and the crushed walnuts...
And the rest is for decoration on top... 
Into the oven it goes at 180 celsius... for 40 minutes...
Tested with the skewer when it was done.... 
And it turned out like this...
Not sure why cracked...
Can anyone tell me?
Is it because I did not "shake" the cake properly before it went in the oven?
I was so worried that it was dried...
Quickly cut and check.....
Hey, it is SOFT!!!
No dryness at all...
Just and moist....
In fact very nice!
Crusty a bit on top and soft inside!
Other than the "earthquake cracks"... 
I am happy with the outcome of this mini sized cake...
OK, next time I will do a double portion...
Minus the cracks if someone were to tell me why!
LOL....

  3. Wow! You are now slowly becoming baking sifu! My cakes usually have a crack too except the butter cake that uses egg separation method. I wanna try your this recipe because it makes a small cake, just nice for me and my partner.

  6. I always loved walnuts and would buy them in China & Korea. I would munch them directly into my mouth like kachang. To bake them with your banana cake is a marvelous idea! I like.

    The cracks on the cake makes it look sexy!!
