My Pregnant Pecan, Macadamia And Pine Nuts Cupcakes

NUTTY CUPCAKES....  Baking mode is ON this morning!  I have plans to do some baking today... Macadamia cookies and Pecan cupcakes, two at the same time but ended up doing cupcakes only.  Reason why?  I could not find the recipe given by my SIL in my handphone.  That is the consequences of not saving it up and also not disclosing it in my blog post.  Ahhhhh.... Now ... somebody must be thinking... "Serves you right for not sharing with us!"  LOL.... 

So I ended up making a double portion of cupcakes instead, this time I tweaked the recipe to my own liking, my cupcakes are filled with blended pine nuts, pine nuts, pecans and macadamia nuts.  They are called Nutty Cupcakes cos they got "pregnant" and kept growing and growing from their "belly" when they were in the oven.  LOL.... 

Ok, first things first.... my Nutty Cupcakes recipe.... servings for 14-16.
One whole SCS butter
130gm sugar
Cream them up... 
Add in 4 eggs, one at a time.... 
2, 3 and 4.... eggs.... 
Then I add in 200 gm of self raising flour
40 gm of blended pine nuts...
40 gm of pine nuts whole... 
Pecans and Macadamia nuts as toppings... 
And into the oven they went..... 
I baked them at 160 degrees for 20 minutes...
Some just grow bigger and bigger in the midst of baking till they nearly overflow... 
That is why I called them "pregnant" cupcakes... 
I wonder why their shapes are so uneven this time....
Maybe because of the size of their "clothing?"
Or perhaps I did not shake them properly before they went into the oven.... 
This is definitely "overgrown!"
While this size is just right.... 
Anyway, all could be eaten cos they are soft and buttery.... 
A reminder though... 
The size of the paper cupcakes must be the same!

  2. I want to eat them too! So yummy! No need to blend the pine nuts, just put all of them into the cupcakes! Tasty!

    My oven broke down last month. Have not bake for quite sone time.

Lunar New Year 2024 Before And After
