Groundnuts Porridge

From my previous badminton post, I jumped to cooking porridge... hahahaa... (no la lang one)

Sometimes I do not know what to cook for my kids and boiling porridge seems to be the easiest.. just dump everything inside the pot and let it cook in slow fire.....

Easier said than done... when it comes to groundnuts porridge, the nuts must be soft then only the porridge is nice, right? My three fellas love them soft and chewable....

first I soaked them with hot water...

then I boiled them in slow fire till soft..
took a long time lah!
any other way to quicken up the process?

RM5 minced meat with added cornflour, salt, pepper, sauce

some dried scallops...
and 2 salted eggs... all dumped into the porridge..

and after an hour or so, we get to eat this...

Salted eggs, Groundnuts, Minced meat, Scallop Porridge!
anything else to add in?

  5. Dad and Mum love to eat porridge on Sundays. We add something extraordinary into the porridge - Grilled Pork Knuckle (Siew Chee Keok / Siew Chee Sao) and the outcome is... very flavourful porridge because the five-spice powder used to marinate the pork knuckle has infused into the porridge. While waiting for the porridge to cook, I will keep stirring for nor less than half an hour so as to produce a creamy, smooth texture and more concentrated porridge.

  44. hi claire - for me, instead of putting groundnut, I put in the other type of nuts loh (the skin is red colour eh before we kopek out the nuts), that one easy to turn soft cos I'm cooking porridge everyday for Lindy and myself (poor me, my lunch is porridge lah everyday after she can eat solid food). Besides, i ada masuk brocoli, sometimes i change to pumpkin; bayam; potato and macam2 lah i change-change. I like to add in baby corn (this one is for myself and lindy jz take the taste only lah cos baby corn won't turn soft, dia tak boleh makan - I like to eat the baby corn, sedap. maybe u can try try and see next round.
