Healthy Meatless Egg Pancake/Pizza For Tea Time

MEATLESS DISH... cooked as a snack for tea time.  Yes, I think I eat funny snacks at odd hours.  I had an early lunch on that day and I was hungry by the time it was 3pm.  I looked into the fridge and I saw three types of vegetables "staring" back at me.  Broccoli, cauliflower and carrots, they had been in the fridge for 4-5 days already.  I must do something about them....

I quickly googled Youtube and typed in broccoli and cauliflower, got a few recipes using those and I tweaked a bit here and there to come out with this vege egg pizza, I would call it.  LOL....

Using my manual dicer, (I must show my most useful gadget one day!) I diced the cauliflower, broccoli, carrot and a big onion.  Mix them all together in a bit bowl, add in some salt, pepper, chili flakes and 3 eggs... and the dish is ready to go!
Use a non stick pan will do the job....
Mixture all into the pan....
Using the knowledge I watched in youtube,
I overturned the pan using another bigger plate....
so that the pancake won't end up in bits...
Whole like this... LOL...
Thick and properly cooked....
A healthy dish for tea....
No meat so it won't be very filling to my tummy...
Eat it with Kimball chili sauce...
I think I took 4-5 pieces...
No guilt cos it is meatless!
LOL...

  4. I agree with everyone here that this is a vege omelette. Egg is a substitute for meat because both are protein.
